Q: Can I make cinnamon almonds at home?
A: Yes you can! Take ½ lb of almonds, ½ lb (or less) of sugar, ½ cup of water, and 1 teaspoon of cinnamon.
Mix all ingredients in a sauce pan or hot pot and put heat on high. Here is the secret: you have to keep mixing until it is done: DO NOT STOP MIXING or the whole thing will burn in a second! What happens: The water will boil and then the mixture will dry out and turn fluffy powdery. That’s when the melting begins. Keep stirring!! When the sugar melts and the nuts look about 50% wet, turn off the heat and keep mixing. The nuts will dry out, but this time the sugar will be stuck to the nuts. Splash just a little bit of water on the mixture, about a ¼ cup or less of water at the end will do. You don’t want a puddle at the bottom of the pan.
